The Shropshire countryside is famed for its cattle herds and fine arable farms. Now, thanks to the Jones family of Ellesmere, it is making a name for itself as the quinoa capital of the UK, too. Founded a decade ago, The British Quinoa Company is on a mission to make Shropshire a home-away-from-home for the nutritious rice alternative which is native to the Andes in South America. Organically grown without the use of pesticides and other chemicals, the Jones family has even been able to develop its own variety of distinctive British quinoa - one that allows the whole grain to be used, giving the final product a rich golden colour and deeper, nutty taste not unlike brown rice. Use as a substitute for rice as an accompaniment to your favourite dishes, or use as a salad base to create a tasty, fibre-rich side dish.
