Whey butter is a traditional by-product of cheesemaking. Unlike ordinary butter, which is made using fresh milk, whey butter uses the liquid separated from the curds following the first stages of cheese production. As a result, it has more depth, with rounder flavours - and is incredibly moreish!. Although the practice of churning whey butter has dwindled amongst modern manufacturers, Appleby’s of Shropshire is one family business that has kept the traditions of the farmhouse alive. It's whey butter is delicious on savoury scones or hot crumpets, or melted on top of a piping hot baked potato.
